Eli turns ONE
Happy Birthday, Baby Boy!


The night of his birthday we celebrated at home with a little mini cake and some cupcakes. Then on Sunday we met some friends and family at IHOP for a late lunch and cake.


And his special guest, his favorite (and only) teen babysitter!

5 Minute Chocolate Mug Cake
5 MINUTE CHOCOLATE MUG CAKE
4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
A small splash of vanilla extract
1 large coffee mug(MicroSafe)
Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly. Pour in the milk and oil and mix well.. Add the chocolate chips (if using) and vanilla extract, and mix again.Put your mug in the microwave and cook for 3 minutes at 1000 watts. The cake will rise over the top of the mug, but don't be alarmed! Allow to cool a little, and tip out onto a plate if desired.EAT ! (this can serve 2 if you want to feel slightly more virtuous).
So this was shared with me by a friend on one of my Mommie Message Boards. I tried this on
my 10 minute break tonight. Took me the whole ten minutes to do this, but I was having trouble finding any of my measuring spoons (grrrr). Smells yummy! It was cool to watch it rise up. It falls back down after you take it out. Let it cool a few minutes and dumped it out. I opted for the chocolate chips because I had them on-hand, and well, you can never have too much chocolate, right?!?! First taste, pretty good. I definately would put in the choc chips, it needs them. While it's no gourmet cake, it's tastey, and well for 3 minutes in the micro, you can't expect gourmet, right? Will definatley do this again and will probably let each of the kids make one this weekend.
Polka-Dots are FUN!
I know, I've slacked on posting. Sorry. Nothing too entertaining to share anyway. But I did make this cake for Jacob's teacher's birthday and thought I share b/c it was too darn cute! Her favorite color is red and she loves anything with polka-dots, so voila! Everyone kept saying "that's so Molly". I was very proud!
